Ashby Fundraiser

Head on over to 'Trapped Between a Scream and Hug' because they're doing a great fundraiser for a family in need on Monday.

Kerry Ashby, a husband and father of 4 was involved in a serious ATV accident that has left him a paraplegic. Not only will the medical bills be ridiculous, but it will be necessary for the Ashby's to renovate their home to make it wheelchair accessible.

This is the part where you come in. On May 3rd, the above mentioned blog will be having an awesome sale/auction on their blog, with all proceeds going to the Ashby family.

itty bitty boo kits

oh my! look at these little cuties. i think they are such a clever idea. great to throw in your purse, diaper bag, car, stroller, etc. i just ordered mine from this cute shop, max and ellie. plus they have a bunch of other adorable stuff; little shirts, onesies, button bobbies, etc.

some yummies!

i have been fixated on these two yummy recipes from the better homes and garden magazine...
oh so delicious!

Open-Face Pesto-Chicken Burgers


1 lb. uncooked ground chicken or ground turkey
4 Tbsp. basil pesto
1/4 cup finely shredded Parmesan cheese
3 cloves garlic, minced
1/4 tsp. salt
2 three-inch slices ciabatta
2 Tbsp. olive oil
4 slices fresh mozzarella cheese
2 cups fresh basil leaves
8 small tomato slices
Ground black pepper

1. In a bowl combine chicken, half the pest, the parmesan cheese, garlic, and salt. Shape in four 1/2 inch thick oval patties

2. Horizontally halve ciabatta. Brush cut sides of ciabatta; set aside.

3. Grill patties on bbq until chicken is no longer pink. Top each patty with mozzarella cheese. Cover grill for 1-2 more minutes until chesse is melted. Add bread to grill for 1-2 minutes until toasted.

4. Arrange basil on toasted bread. Top with chicken patties, tomato slices, and remaining pesto. Sprinkle coarsely ground black pepper on top.

and another one for you. my friend, sara, made this for one of our 'dinner-days' and i have made it multiple times since then. yum, yum!

2 cups cooked, diced potatoes- like fingerlings
1 Tbsp. olive oil
4 flat bread (naan) or pita rounds
olive oil
4 oz. crumbled feta cheese with garlic and herb
2 cups prepackaged spinach
12 oz. thinly sliced deli roast beef
kalamata olives (optional)
cherry or grape tomatoes- halved

Preheat oven to 475. Place naan on cookie sheet. Brush with olive oil, sprinkle with feta. Bake for about 5 minutes- until cheese starts to melt. Take out of oven and top with everything else. Return to oven until cheese is melty and edges are toasted.
